Today a young woman came to the Modern Pantry at lately lunch time.
She took seat on the banquet in the cafe and had plain water. When I took her order, she insisted to order the desert at the same time as her two courses lunch, simply because she was so decided about it.
When I saw her later I inquired about her appreciation of the “Lime curd, blackcurrant ... trifle”. Naturally we started chatting. She is a pastry chef and she is used to work in a three Michelin Star restaurant, with ten pastry chefs on a shift. All is about detail, perfection, rapidity.
She has blond hair, just above the shoulders. She is pretty. She looks intelligent and very confident... and young.
She is young. She left Croatia at 19 years old when she had just finished her studies to work in a restaurant in New York for four years. She has just arrived in London and she is looking for new experience in another restaurant. On Saturday, she will try at “Daniel’s restaurant...
- Daniel?... Bar Boulud?
- Yes.
- When I came in London, I went there with my CV!”
Bar Boulud is the high quality restaurant I was referred to by Robert’s mate.
Anyhow, I saw in this woman so much ambition and so much self-confidence and I know these are qualities that I admire and want to be mine. I would have spoken with her for hours. She left me on an advice to pop in Bar Boulud later with my CV, maybe, because the service there is excellent and it would give me such a good formation.
