We have two flours at the Modern Pantry: the Café and the Restaurant. Tonight I was meant to help Will and Francesco in the Restaurant which happened to be full. Francesco never showed his nose.
Antonello was the manager tonight. He has seen me make several mistakes in the past weeks and therefore he would not assign me a busy section.
I did not mention my mistakes at work because I was feeling very bad about these: wrong order, wrong table, cash-off the wrong bill, not be aware of the time they wait for their meal... Last week I wasted a Poussin. Zoe advised me to be careful with the orders, otherwise I could be charged for the wasted dishes. I was really mad. I asked Candi to remove the Poussin from my Pay slip, which she firmly refused.
I have been working pretty hard on concentration over the last week, spending more time at the table, more time at the till, making sure everything is clear on the docket, etc. I start to feel more confident.
When Javier told me that Anto wanted him to take Francesco’s section and me to go back to the Café, I was unhappy to understand that Anto did not think I was able to handover this section. Javier told me he did not like this section. Hence I decided to go for it. I asked Anto to keep the section.
- I need someone strong here. Are you sure you can do it? You ask for help if you need it.
- Yes. Yes. Yes.
I had a moment of stress during the evening when surrounded with duties. But this moment was short.
I have never made so many tips – these are added tips to the included 12% on the bill. A table of four people left £8 and a woman told me that everything was perfect and the service was excellent. I was surprised. A table of two left £15. I don’t know why. A table of six left £30!!! My last table, eight people, didn’t leave much, but they seemed very happy and they had drinks till the closure. Beside, the other sections didn’t get much. I think I did a good job but I was so grateful for the One who sent me guests so generous tonight, proving to Anto that I was “strong enough”:
